24 oz chicken broth
2 (4-inch) stalks lemongrass
1 (2-inch) piece fresh ginger, peeled and sliced
2 (12 oz) cans lite coconut milk
2 Tbs lime juice
2 Tbs Thai red curry paste
2 Tbs Thai fish sauce
2 Tbs brown sugar
2 rotisserie chicken breasts, shredded
salt, to taste
2 cups rice, cooked
1/4 cup cilantro leaves, roughly chopped (for serving)
lime wedges, for serving
red pepper flakes, for serving
fresh chile pepper slices, for serving
Directions
  1. Add broth to a large pot. Remove the tough outer layer of lemongrass stalks. Split the stalks lengthwise. Add lemongrass and ginger to the pot. Bring to a boil. Simmer for 15 minutes. Strain out the lemongrass and ginger; discard them.
  2. Return the broth to the pot. Over medium heat, add coconut milk, lime juice, curry paste, fish sauce and brown sugar. Stir gently to incorporate all ingredients and warm throughout. Add chicken, and bring to a simmer. Cook for 10 minutes on a low simmer. Taste for seasoning. Add salt, if needed. To serve, add 1/2 cup of rice to a soup bowl. Top with 1 1/2 cups of soup. Garnish with cilantro, lime wedges, pepper flakes and pepper slices.
